Homemade Tomato Sauce
My better half has a veggie garden in our back yard, and it is in full force. We had so much tomatoes and basil lately, didn’t know what to do with it. So, I made a homemade tomato sauce.
2 cups (2 large) chopped onions 2 garlic cloves, minced 1/3 cup oil or olive oil 8 cups (12 medium) coarsely chopped, pealed tomatoes 1 tablespoon oregano leaves 1 teaspoon sugar 1 teaspoon basil leaves 1 tea spoon rosemary leaves, crushed 1/2 teaspoon salt 1/2 teaspoon pepper 2 cups water 12-oz can tomato paste In 4 quart saucepan or Dutch oven, saute onions and garlic in oil until tender. Add remaining ingredients; bring to a boil, stirring occasionally.

That was it. And I tell you, we didn’t have tomato paste and I chopped sweet italian sausage mixed it in. Took me about and hour and half, and it was amazingly good sauce. Whoa. Maybe it’s my hidden talent. Here I come Jamie Oliver, watch out!
